- 1/4 cup brown sugar
- 1/2 oz instant yeast packed (13 grams)
- 2 1/2 pounds all-purpose flour (2.5 pounds = 9 cups of flour)

- 1 tbsp salt
- 1 lb pepperoni
- Preheat 350 f; 15 minutes
- Combine water, brown sugar and yeast. Mix two minutes on low speed.
- Add flour, salt and oil. Mix 10 minutes until a dough forms (I generally use a dough hook for this process) and is shiny. Place dough in large bowl and let rise until double in size (This takes roughly 2-3 hours, depending on your temperature, etc.)
- Cut dough into 16 pieces. Flatten pieces of dough with a rolling pin and place about 16 slices of pepperoni and some cheese in the center. Bring edges of dough up and seal dough around pepperoni-cheese mixture. Do this for every one! Coat a baking sheet (with raised edges, because pepperoni grease is not friendly for ovens) with nonstick spray or parchment paper and place rolls on it. Let them sit and proof for about 1-2 hours. Then preheat your oven to 350 degrees Farenheit and bake for about 15 minutes until they're golden brown and delicious on the outside.

1 tsp vanilla extract
1 tsp lemon zest

Spaghetti Dust
1.5 tablespoons garlic powder (not granulated)
1 teaspoon crushed Calabrian red pepper flakes
1 tablespoon dried parsley flakes
1 teaspoon sea salt (or to taste)
1 teaspoon dried oregano or basil for added depth (optional)
Spaghetti Dust (alt)
1 tbsp garlic powder
2 tbsp dried parsley
1/2 tsp red pepper flakes
Taco Seasoning
1/4 cup sweet paprika
2 tablespoons chili powder
2 tablespoons dried oregano
1 tablespoon cornstarch
1 tablespoon kosher salt
1 tablespoon ground cumin
1 tablespoon garlic powder
1 tablespoon onion powder
1 teaspoon granulated sugar
1 teaspoon ground coriander
1 teaspoon freshly ground black pepper
Use: 3 tablespoons of this taco seasoning is equivalent to 1 package of taco seasoning.
Storage: The seasoning keeps well in an airtight container at cool room temperature up to 6 months
Indian Spice Rub Recipe
1 teaspoon ground cumin.
1 teaspoon ground coriander.
1 teaspoon ground turmeric.
1 teaspoon garam marsala.
1/2 teaspoon garlic powder.
1/2 teaspoon ground ginger.
Pinch of cayenne pepper.
Salt to taste.
Makes about 2 Tablespoons

40g pumpkin seeds
A pinch of cumin seeds
4 garlic cloves, peeled, but left whole
80g curly kale, de-stemmed and washed
1½ slices of preserved lemon, flesh and pith removed and finely chopped
1 tbsp lemon juice
20g grated parmesan
A generous pinch red chilli flakes
6 tbsp extra-virgin olive oil
Salt and black pepper
Aglio e Olio
1 lb dried spaghetti
1 cup extra virgin olive oil
12 large garlic cloves, thin slivers
1 tbl crushed red pepper flakes
1 cup fresh parsley, minced
1/2 cup Parmesan cheese, grated
sea salt
ground black pepper
2 lemons
Aglio = garlic
Olio = oil
Heat the oil in a large pan over medium heat then add the garlic. Be sure to stir the garlic as it cooks or it will cook unevenly and begin to burn. Once the garlic is golden brown, add the pepper flakes, salt, and pepper, then add the cooked spaghetti and toss until the pasta is fully coated. Add a few tablespoons of pasta water at a time, as needed until the sauce achieves the desired consistency. Turn off the heat before adding the parsley and parmesan, continuing to toss until well-mixed. Taste for salt and adjust accordingly. Garnish with a squeeze of lemon juice and more parmesan before serving.

* Calabrian Chili Peppers, crushed
* 1 14 oz. can Italian San Marzano Tomatoes
* 2 tins of Scout Canning Atlantic Lobster
* Chopped fresh basil, for serving
* Grated Parmesan cheese, for serving
* Kosher salt and freshly ground black pepper, to taste
Bring a large pot of salted water to a boil. Heat the ghee in a large skillet over medium-low heat. As soon as the ghee is melted, add the chopped shallot and a pinch of Kosher salt and 1/2 small shallot for onion, cook, stirring occasionally, until softened, about 5 minutes. Add garlic finely chopped and the chili flakes, then cook, stirring occasionally, until garlic is very soft, about 3 minutes. Add the Reginetti to the water, cooking it until just tender. Reserve 1 cup of the pasta water. While the pasta cooks, add the San Marzano Tomatoes to your skillet. Let the tomatoes reduce for approximately 5-10 minutes, stirring and breaking up the tomatoes as they cook. Strain and add the pasta to the sauce, stirring to incorporate it well. f youd like, add a few tablespoons of the starchy pasta water to thicken the sauce. Fold the lobster into the skillet, letting it warm up for a few minutes in the sauce. Season with Kosher salt and black pepper to your liking. Garnish with some fresh basil and grated Parmesan and serve.

Kokis recipe
Ingredients
- 250G rice flour
- ½ table spoon of turmeric powder
- Âź table spoon of salt
- ž cup of coconut milk (thick)
- 1 Egg
- 1 Litre of coconut oil
Method
Sieve flour into a bowl and add turmeric, salt, coconut milk
Beat an egg and add to above mixture and make a thick batter
Heat the coconut oil using a fry pan and when bubbling the oil keep the mould in deep of the pan until gets hot
Dip the kokis mould in batter and remember not to dip as completely covering the top of mould
Keep it in the hot oil. Remember not to take out the mould until fries the batter 10 seconds
After 10 seconds take out the mould and let kokis fries 4 minutes until it turns to golden color and apply this procedure to remaining batter

Baking this one-pot rice dish ensures evenly cooked grains. You can prepare it all on the stovetop too: Instead of transferring the skillet to the oven, adjust the heat to maintain a bare simmer while covered and cook until the rice has absorbed all the liquid, about 20 minutes. Remove from the heat and let stand for 5 minutes before serving.
Ingredients
4 bell peppers, 1 thinly sliced, 3 diced
2 tablespoons distilled white vinegar
Kosher salt
2 teaspoons dried garlic chips
2 teaspoons dried thyme
½ to 1 teaspoon cayenne or other dried ground hot red pepper
2 dried bay leaves

2 pounds boneless skinless chicken thighs, cut in 2-inch pieces
1 medium onion, diced
1 piece (1 inch) fresh ginger, peeled and grated
2 cups jasmine rice, rinsed well and drained
Âź cup tomato paste
Instructions
Toss the sliced pepper with the vinegar and ½ teaspoon salt. Let stand. Heat the oven to 350 degrees.
Combine the dried garlic, thyme, cayenne and 1 bay leaf in a spice grinder and pulse until finely ground; reserve.
Heat the oil in a Dutch oven or other heavy large, wide skillet with an ovenproof lid over medium-high heat. Generously season the chicken with salt, then add to the hot oil. Cook, turning the pieces occasionally, until browned, about 5 minutes. Donât crowd the pan; work in batches if you have to.
Add the onion and diced peppers and sprinkle with salt. Cook, stirring occasionally, until they start to soften, about 5 minutes.
Stir in the ginger, spice mixture and 2 teaspoons salt, then stir in the rice. Cook, stirring, until the rice is toasted, about 2 minutes. Add the tomato paste and cook, stirring for 1 minute, then add 3 cups water and the remaining bay leaf and bring to a boil. Cover, transfer to the oven, and bake until the rice is tender and has absorbed all of the liquid, about 20 minutes. Remove from the oven and let stand for 5 minutes.
Uncover the rice and season to taste with salt. Drain the pepper slices and scatter over the hot rice and serve

1. Add yerba mate and teabags to liquid measuring cup.
2. Boil water and fill to about 12 oz. line. Let steep for about 8 minutes. (You'll want it to be strong.)
3. Meanwhile, add generous amount of honey to your cup. (I squeeze the honey bear for about 5 seconds directly into the cup. It's probably about 2 Tbsp.)
4. Add about 3 Tbsp. orange juice to the honey in your cup. Microwave for 1 minute and stir to combine.*
5. Once the tea is done steeping, strain it into the cup using the mesh filter. Stir to combine.
6. Add honey and orange juice to taste. It's best when hot, so give it another zap in the microwave if needed. Bonus: grate some fresh ginger into the measuring cup when you steep your tea for an added kick.
Soy-wasabi Butter Mushrooms
2 cups assorted mushrooms, halved (button, shiitake, king trumpet)
3 Tbsp. butter
2 Tbsp. soy sauce
1 tsp. wasabi paste
1 pinch Kosher salt
Juice from a quarter lemon
Wipe/clean mushrooms with a slightly damp paper towel (donât ever wash mushrooms!), then halve the pieces. You want meaty hunks here. SautĂŠ these mushroom over medium-high heat, cut side down, with two tablespoons of butter. Avoid any temptation of moving the mushrooms for several minutesâyouâre looking for a gorgeous golden color on the underside.

Dukkah Recipe
110g (2/3 cup) hazelnuts.
80g (1/2 cup) sesame seeds.
2 tablespoons coriander seeds.
2 tablespoons cumin seeds.
2 teaspoons freshly ground black pepper.
1 teaspoon flaked sea salt (like Maldon brand)
Extra virgin olive oil, to serve.
Crusty bread, to serve.
Preheat the oven to 350°F (180°C). Roast the hazelnuts on a baking sheet in the oven for 10 minutes. Once cool, rub the nuts to loosen the skins. Put the nuts, seeds, salt, and pepper in a food processor and pulse until finely chopped. Store in an airtight container in the fridge for up to 2 months.
Cashew Cream
1 cup cashews
1â2 cup filtered water
Soak cashews overnight in double the volume of water. Drain and rinse. Put the cashews in a blender with the filtered water and pulse until smooth. Store in the fridge in an airtight container for 2â3 days. Makes approx. 3â4 cup
Beet Hummus
Makes approx. 1.5 cups
3â4 cup beets, coarsely chopped ⢠1â2 tbsp olive oil
Roast beets for 30 minutes
Sweet Potato Falafels
1â2 cup sweet potato, skin on and diced ⢠1 tsp coconut oil ⢠1 tbsp red onion, finely chopped ⢠1 garlic clove, crushed ⢠1â4 tsp turmeric ⢠1â4 tsp cumin ⢠1â2 tsp red chile pepper, finely chopped ⢠1â4 cup chickpeas, ready to eat ⢠1 tbsp lemon juice ⢠1â2 tbsp tahini ⢠1 tbsp cilantro, chopped ⢠Salt and pepper to taste
1) Preheat the oven to 400°F (200°C).
2) Steam the sweet potato for 10â15 minutes until soft.
3) Heat the oil in a frying pan over medium heat and cook the onions and garlic until soft. Add the spices, then cook for 2 minutes.
4) Put the chickpeas, potato, lemon juice, tahini, and cilantro in a food processor and pulse until very roughly combined. Transfer to a bowl with the spicy onion mixture and combine.
5) Season with salt and pepper.
6) Roll the mix into four balls, put on a baking pan, and bake for 20 minutes.
7) Let cool on a wire rack to firm up before serving

Directions
Preheat oven to 375 degrees. In a medium bowl, combine turkey, garlic, sage, green onions, egg, pepper and 1 teaspoon salt. In a skillet over medium heat, heat olive oil and then brown the turkey mixture. Remove from stove and transfer mixture to a large bowl.
In a pot of boiling water, fblanch green beans for 2 to 3 minutes. Using a slotted spoon, remove beans and plunge them into ice water. Once cool, drain completely and add to turkey mix.
In a skillet over medium heat, fry bacon until crisp. Remove from pan, and cool bacon on paper towels. Chop bacon into 1/4-inch pieces and add to turkey mix. Gently combine turkey mix, beans and bacon and spread in an even layer in a 9x13-inch baking pan.
In a large skillet over medium-high heat, heat 2 tablespoons butter. As soon foam begins to subside, add mushrooms and cook, stirring continuously, until mushrooms are browned, about 4 to 6 minutes.
In a medium saucepan over medium heat, melt remaining 4 tablespoons butter. Slowly and evenly sprinkle flour into the butter. Cook for 2 minutes, then slowly whisk in the milk and half and half. Cook for 2 more minutes, then add diced onions, remaining 1 teaspoon salt, and pepper to taste. After 1 minute, stir in 2 1/2 cups cheese and cook, stirring, until melted. Pour cheese mixture evenly over casserole. Scatter Tater Tots over the top, then scatter remaining shredded cheese. Bake until golden brown, about 45 minutes. Remove from oven and serve.
